Pancakes are loaded with carbs. Add on some maple flavored corn syrup and you've got a recipe for breakfast disaster. This alternative is filled with protein, calcium, and very low carbs. Try topping them off with some low sugar yogurt and blueberries instead of syrup. A superstar breakfast that is quick and easy to make.

  • 1/2 cup oatmeal
  • 1/2 cup cottage cheese
  • dash vanilla
  • teaspoon of cinnamon
  • 2 eggs or 4 egg whites 
Blend all ingredients in a blender or food processor. Spray a pan with a cooking spray like Pam. Heat the frying pan to a temperature just a little lower than you would use for regular pancakes (try 5 or 6 on the dial if you aren't sure). Pour the batter, making sure it is not too thick and cook until the top looks dry. (2-3 minutes) Flip and cook for another minute. Enjoy!
