This chicken recipe works well prepared inside or on the grill and it tastes fantastic. An added bonus is that ginger is a well known anti inflammatory so it might help out those bad knees!
 
1lb of boneless skinless chicken breasts, cut into long strips
1 large handful of fresh ginger root (find in the produce section)
1/4 cup honey
1/4 cup sesame oil
salt and pepper to taste
 
Use a vegetable peeler or paring knife to remove the skin from the fresh ginger root. Put the peeled root into a blender or food processor (cut into chunks if needed). Add the sesame oil and the honey, salt and pepper. Blend until liquefied.
 
Put the chicken strips into a zip lock back and add the honey ginger sauce. Marinate at least 3 hours.
 
If cooking indoors, heat a frying pan to medium high heat and add a small amount of olive oil (sesame oil will smoke too much). Carefully add chicken strips and cook both sides till done, about 3 minutes each depending on thickness. If cooking on the grill, use a wooden skewer to hold chicken strips and cook both sides till done.
